Polenta Lasagna Recipe

  • Kale and spinach
  • Red and Green peppers
  • Onions, garlic
  • Fresh basil
  • Fresh Thyme
  • Olive oil
  • Vegan butter
  • Marinara sauce
  • Pitted kalamata olives
  • Vegetable broth
  • Coconut milk or Soy milk
  • Salt to taste

Cook polenta in coconut milk and vegetable broth, sautéed all vegetables until tender.
Mix all sautéed vegetables with marinara sauce and vegetable broth .
Put in a sauce pan and serve as a lasagna dish.
Bake at 350 degrees for 30 mins.
